Separate chocolate products
Chocolate syrup, cocoa slurry, fillings and molten chocolate are not interchangeable duties. Their water content, fat phase, solids, temperature limits and cleaning methods differ. Specify the actual formulation family and the acceptable product changes. A system considered for a water-based syrup should not automatically be used for a fat-based chocolate mass.
Review direct gas contact
Compressed air above the product can contact the liquid. Determine whether oxygen exposure, entrained gas or moisture could affect quality. Air filtration and drying must be designed for the required quality, but they do not make every air-sensitive product suitable. An inert-gas proposal would be a separately engineered utility and process arrangement, not an assumed substitute.
Maintain the temperature envelope
Record the temperatures needed for filling, transfer and idle periods. Insulation alone does not provide active temperature control. Review cold spots in valves and the receiving route, and consider what happens after a planned stop. Heating methods, if required, must avoid damaging the product and be compatible with the equipment and cleaning concept.
Validate with the real material
A representative trial should assess throughput, texture, aeration, residual product and cleaning. For quality-sensitive products, use the factory laboratory method and consistent sample handling.
